Heavily-processed foods contribute to overeating and weight gain, study finds

By now it is well-known that processed foods are no friend to fast weight loss and overall health. They contain any number of additives that promote bloating and weight gain, such as processed sugar, as well as plenty of sodium, calories, and unhealthy fats. And while saying no to processed foods is an important weight loss tip, new research indicates eschewing such foods is even more important than people previously thought. A study from the National Institute of Diabetes and Digestive and Kidney Diseases has found processed foods contribute heavily to overeating and weight gain. The study was published in the health journal Cell Metabolism.

A Small-Scale Study

For this study, researchers worked with 20 adult volunteers and defined processed foods as those containing hydrogenated oils, flavoring agents, high-fructose corn syrup, and emulsifiers. Participants consumed ultra-processed and unprocessed meals, all of which featured the same amount of calories as well as carbs, sugar, fiber, and fat.

“Though we examined a small group, results from this tightly controlled experiment showed a clear and consistent difference between the two diets,” said Kevin D. Hall, Ph.D., an NIDDK senior investigator and the study’s lead author. “This is the first study to demonstrate causality — that ultra-processed foods cause people to eat too many calories and gain weight.”

Two Pounds

Participants gained an average of two pounds on the ultra-processed diet, while those who at non-processed foods lost an average of two pounds.

“We need to figure out what specific aspect of the ultra-processed foods affected people’s eating behavior and led them to gain weight,” Hall said. “The next step is to design similar studies with a reformulated ultra-processed diet to see if the changes can make the diet effect on calorie intake and body weight disappear.

“We have to be mindful that it takes more time and more money to prepare less-processed foods,” he added. “Just telling people to eat healthier may not be effective for some people without improved access to healthy foods.”
