Pumpkin Spiced Latte Green Smoothie
2 cups cooked and cooled pumpkin (cut into small chunks)*
1 cup chilled coffee (I used decaf)
1 frozen banana, peeled and sliced
1 cup almond milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
tiny dash of ground cloves
2 cups fresh baby spinach (optional)
Start by adding the coffee to your blender (I use a Vitamix), followed by the pumpkin. Add the frozen, sliced banana and spices, finishing with the spinach. Blend on high for 30 seconds or until the smoothie is creamy.
Dark Chocolate Holiday Smoothie
4 ice cubes
1/2 cup whole milk
1/2 ripe banana
2 tablespoons unsweetened cocoa (Hershey’s Special Dark)
2 teaspoons agave nectar, maple syrup, or honey
Pulse ice cubes in blender to crush. Add milk, banana, cocoa, and agave nectar and blend until frothy. Serve immediately.
Fig Banana Smoothie
1 cup dried figs, stems removed, chopped
1 cup banana, slices (1-inch)
1 cup plain low-fat yogurt
3 cups crushed ice
1 tablespoon honey
1 teaspoon vanilla
mint leaf (optional)
Place all ingredients in a blender (not a food processor), and blend until smooth, approximately 2-3 minutes. Strain liquid and pour into tall, chilled glasses. Add garnish of mint leaf or berries if desired. Serve immediately.
Holiday Peppermint Smoothie
11/2 cups (375 mL) skim milk
11/2 cups (375 mL) low-fat vanilla yogurt
11/2 cups (375 mL) ice cubes
5 peppermint leaves, torn
1 Tbsp (15 mL) ground cinnamon
A few drops peppermint extract (optional)
Blend all ingredients and serve in cups garnished with a pretty rim of crushed candy cane.
